PID and IV is linked for mons caught in Gen 3.
Shininess is dependent on PID, TID and SID.

So to change the IVs of a Shiny Mew, you have to change the PID to keep the combination valid.
And to keep it shiny on the newly changed PID, you would have to change the TID and SID to.
