What are Festival Plaza’s “Used Stats” in PKHeX?

I have noticed over several playthroughs that when I have had the exact same Festival Plaza building (down to a person) everything is the same in the Buildings tab in PKHeX, except for the Used Stats line. The numbers/letters in the line fluctuate, again, even for the same types of buildings/persons.

 

I have not found anywhere online what this represents. If I were to edit the person/booth to something of my liking, would this Used Stats line interfere?
