How to modify the pokemon with which I defeat the elite four and champion, is there a type of team registration apart from the ribbon they receive?

There is no "Hall of Fame" in Scarlet and Violet, and the ribbon is applied when you beat the Elite 4, and any time you challenge the Academy Ace Tournament.
