In case you don't get a reply, my simple response would be "simply play the game on your Switch, and acquire a fresh save from there"

What you just said doesn't make grammatical sense. Also don't see how Animal crossing comes into this.

In any case, you can create a profile and start a new game. Once you bought the game, you can create multiple profiles to have access to multiple saves.
(Since you apparently have Atmosphere, you can then use Checkpoint/JKSM to dump the save)
