Confused about memories

Do memories matter? Can they even be checked in Sun/Moon like they were in ORAS? 

Also in pkHEX there's OT memories and notOT memories, any difference? Which memories show up in game? 

I just don't wanna get screwed, because i've created legal pokemon with the right balls, right places met etc but I haven't touched any memories on my pokemon because I didn't even know memories existed.

I thought Memory Link was a feature that was only in BW2?

Memories do not matter in Sun and Moon as they are not in Sun and Moon. I think you should be OK with the default options.
