The only downside of Jailbreaking your iPod is that it voids your Manufacturer Warranty. Not a warranty from a store, but from Apple itself. Meaning if something ever happens to your iPod Touch after you Jailbreak it, its not covered by Apple. I myself have not done this, mostly because I am content with what Apple has to offer currently.
