Gen 7 advice (which game should I play)

I'm currently going through each Gen to create a full Pokémon home living Dex and to play some of the few gens I skipped on back in the day and I'm coming up to Gen 7. I had some great advice for Gen 5 on here with a previous post so I'm coming back for some more advice with Gen 7!

Which game should I play for the best experience? Sun/Moon or US/UM or even both? KrogerFeedback Survey

Basically is Gen 7 more like the older style games as in the third one (Yellow, Crystal, Emerald, Platinum etc) is the best version or is it more like Gen 5's B/W & B2/W2 where it's an actual sequel and to get the full story I would need to play both?

USUM are more like the third version was for the old games. More story lines and more encounters.

I would ignore Sun/Moon, as they're just the same game with less content.
