Pokemon Fire Red Hack- Interacting Pokémon

Hello.

I need a bit of help. I want to hack my Fire Red rom, just to see how good I am at hacking, not for any personal gain or to trick anyone or anything. So far, I've managed to create my own map, and edit the Pokémon Location and Levels.

What I do need help in, is this:-

1) How do I alter the Trainer's Pokémon? Is there any particular Program required? If yes, could you please paste the link?

2) How do I add the overworld/interactable Pokémon? For example, when you talk to Mewtwo in Cerulean Cave, it starts to battle you. Is there any way to change the overworld/interactable Pokémon? How do I change the Location of the overworld/interactable Pokémon? Is there any specific Program? If yes, could you please post the link?

I have Googled for a suitable answer, but found none. Could anyone help?
