I've edited the EV's for my pokemon because I'm too lazy to EV train. I gave my level 25 Prinplup 252 Hp, 252 Attack, and 4 speed EVs but his stats don't seem to be getting higher boosts when he levels up. Can someone help me with this? I thought Pokemon got extra bonuses to the stats they have EVs in when they level up... Correct me if I'm wrong.

Since your Pokemon is at lvl 25, you won't be able to tell the difference.
It spreads the evs out between the levels, but they are there. If you go to lvl 100 all matches you can see it clearly.

Whenever a Pokemon's stats are recalculated, it is always done according to the formulas on this page: http://www.serebii.net/games/stats.shtml
A Pokemon's stats are recalculated whenever it 1) levels up, 2) evolves, or 3) is deposited into a box.
If you have a high level Pokemon that you are EV training, the large boosts in stat are due to the recalculation having a bunch of extra EVs. Because the effect of EV Training gets more noticable as a Pokemon levels up, higher level Pokemon will be more prone to huge boosts like that.
For example, an UT Modest, 0 SpA Kyogre will have a SpA stat of 167. Train it to 252 SpA EVs, and it will jump to 207 when it levels up to level 50 and the stats are recalculated.
If the Kyogre started at level 1, the SpA would only jump from 8 to 13.
